Hi there! I’m changing up my diet this week and going to add some quick and easy workouts to my day as well. Four months postpartum and think it’s finally time I clean up my act. It’s so easy to neglect your body of health and fitness, especially if you’re working full time or being mom full time. 😉 So, in efforts of sticking to my new and improved “diet,” here is a classic basil pesto recipe that is so easy to make and takes just 5 minutes to do. This pesto will come in handy when dressing up your weekday meals.
2 cups basil leaves
½ cup grated Parmesan cheese
⅓ cup pine nuts, toasted
2-4 minced garlic cloves
¼ cup olive oil
Salt and pepper to taste
Combine all ingredients in a food processor or blender except olive oil and pulse until chopped. Add the olive oil in a stream to incorporate all the ingredients.
(Pine nuts and garlic can be toasted for a minute or two on medium-high heat prior to making. No need to remove the garlic skins, either. The heat will make them soft and slide off.)
Enjoy it with fresh mozzarella, tomato on sliced baguettes or packaged toasts. I like to drizzle the toasts with balsamic glaze!
You can literally have this with anything. Brush it onto shrimp before grilling. Slather it on a panini. Add to baked salmon, dress up pastas and salads, chicken… You get the idea. 🙂 I’ll need to make some more sauces and dressings for healthy eating. If you have any ideas, let me know!
